A Delicious Chicken & Quinoa Salad

Monday is an excellent day to set up the tone for the rest of the week especially when it comes to preparing and planning for healthy options for our weekly meas. Here's a healthy recipe for a delicious and filling meal that's suitable for someone on a weight loss program.

Grilled Chicken and Quinoa Salad:
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup quinoa
- 2 cups low-sodium chicken broth
- 1 red bell pepper
- 1 yellow bell pepper
- 1 cucumber
- 1 cup cherry tomatoes
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions:
1. Cook the quinoa: Rinse the quinoa under cold water, then combine it with the chicken broth in a pot. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff with a fork and set aside to cool.
2. Grill the chicken: Season the chicken breasts with salt and pepper, then grill them over medium-high heat until they are cooked through, about 6-7 minutes per side. Let them rest for a few minutes before slicing into strips.
3. Prepare the vegetables: Dice the red and yellow bell peppers, cucumber, and cherry tomatoes. Chop the fresh parsley.
4. Assemble the salad: In a large bowl, combine the cooked quinoa, grilled chicken strips, diced vegetables, and chopped parsley. Drizzle with olive oil and lemon juice, then toss everything together until well mixed. Season with salt and pepper to taste.
